Ingredients

  • 1 c. Butter
  • 2/3 c. Granulated sugar
  • 1 x Egg
  • 1/4 c. Light molasses
  • 1 c. Mashed bananas
  • 2 1/2 c. All-purpose flour
  • 1 1/2 tsp Baking soda
  • 1 tsp Grnd cinnamon
  • 1 c. Pecans minced

Method

  • Preheat oven to 350 degrees; grease cookie sheets.
  • In a large bowl with an electric mixer on medium speed, beat the butter till fluffy.
  • Gradually add in the sugar; beat till light and fluffy.
  • Beat in the egg, molasses and banana.
  • In a medium bowl, combine the flour, baking soda and cinnamon.
  • Gradually add in the flour mix to the butter mix; beat till thoroughly blended.
  • Stir in the minced nuts.
  • Drop the dough by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets.
  • Bake for 12 to 15 min, or possibly till the center of the cookies spring back when lightly touched.
  • Remove to wire racks to cold
