Ingredients

  • 1 cup all-bran cereal

  • 1 egg, beaten

Method

  • Preheat oven to 375 degrees.
  • Combine bran cereal, bananas, and milk in a large bowl, stirring well; let stand 5 minutes.
  • Add sugar, oil, egg, and vanilla; mix well.
  • Combine flour, baking powder, and salt; stir into bran mixture just until combined.
  • Spoon batter into a paper-lined muffin pan.
  • Bake at 375 degrees for 20 to 25 minutes.
