Method

  • For yiao fan (sticky fried rice):
  • Fry shallots until brown and remove from pan.
  • Put oil in pan and re-add shallots.
  • Add salt, soy sauce, and white pepper.
  • Add rice (can be precooked to speed up process).
  • Mix until brown.
  • Add peanuts and shrimp and stir well.
  • For filling:
  • Fry shallots until brown
  • Add shrimp
  • Brown meat
  • Add mushrooms
  • Add all sauces
  • Alternative method: marinate all ingredients in sauces before cooking
  • To wrap:
  • Soak and clean bamboo leaves.
  • Wrap filling in rice and then bamboo leaves. Steam for 30 minutes.
