Method
- For yiao fan (sticky fried rice):
- Fry shallots until brown and remove from pan.
- Put oil in pan and re-add shallots.
- Add salt, soy sauce, and white pepper.
- Add rice (can be precooked to speed up process).
- Mix until brown.
- Add peanuts and shrimp and stir well.
- For filling:
- Fry shallots until brown
- Add shrimp
- Brown meat
- Add mushrooms
- Add all sauces
- Alternative method: marinate all ingredients in sauces before cooking
- To wrap:
- Soak and clean bamboo leaves.
- Wrap filling in rice and then bamboo leaves. Steam for 30 minutes.
