Ingredients

  • 1 to 1 1/2 lb. zucchini
  • 1 1/2 c. soft bread, broken in pieces
  • 1/2 c. grated cheese
  • 1/4 c. chopped onion
  • 5 slices bacon
  • 1 can stewed tomatoes
  • 2 Tbsp. minced parsley
  • 1 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 eggs, beaten
  • 2 Tbsp. butter
  • 1/4 c. grated cheese

Method

  • Peel and cook zucchini in 1-inch of water with 1 teaspoon salt for 5 to 7 minutes.
  • Drain.
  • Then add all the other ingredients. Put in a casserole dish; top with 1/4 cup grated cheese.
  • Bake at 350° for 30 minutes or until top is brown.
