Ingredients
- 1 to 1 1/2 lb. zucchini
- 1 1/2 c. soft bread, broken in pieces
- 1/2 c. grated cheese
- 1/4 c. chopped onion
- 5 slices bacon
- 1 can stewed tomatoes
- 2 Tbsp. minced parsley
- 1 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 eggs, beaten
- 2 Tbsp. butter
- 1/4 c. grated cheese
Method
- Peel and cook zucchini in 1-inch of water with 1 teaspoon salt for 5 to 7 minutes.
- Drain.
- Then add all the other ingredients. Put in a casserole dish; top with 1/4 cup grated cheese.
- Bake at 350° for 30 minutes or until top is brown.
