Ingredients
- 2 lb. zucchini
- 2 eggs, beaten
- 1/3 c. bread crumbs
- 1/3 c. Parmesan cheese
- 1/4 c. salad oil
- 1 small onion
- 1 Tbsp. parsley
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. garlic salt
Method
- Boil split zucchini 15 minutes in 1/2 cup salted water. Drain.
- Scoop out pulp and save, leaving clean cavity.
- Arrange zucchini shells in oblong baking dish.
