Ingredients

  • Salmon filets, skin removed
  • 1 tsp lemon zest
  • 1 lb. strawberries, diced
  • 2 kiwifruits, peeled and diced
  • 1 cucumber diced
  • 2 T chopped fresh mint leaves
  • 2 T fresh lemon juice, divided
  • 1 lb. spinach leaves

Method

  • Preheat oven to 350. Place salmon on baking sheet and sprinkle with lemon zest. Bake 15-18 minutes or until cooked through. Place strawberries, kiwi, cuke, mint and half lemon juice in medium bowl and combine. Steam spinach. Stir half lemon juice into spinach. Divide spinach among plates. Top with salmon and salsa.
