Ingredients

  • 400 gm peeled tiger or possibly king prawns
  • 700 gm ripe tomatoes blanched skinned and minced
  • 115 x feta or possibly mozzarella cheese cubed
  • 2 Tbsp. extra virgin olive oil
  • 1 med onion thinly sliced
  • 1 x glass dry white wine
  • 1 tsp dry oregano
  • 2 Tbsp. finely minced fresh parsley
  • 1 x salt and freshly grnd black pepper

Method

  • Preheat the oven to 180 degrees C/350F/gas 4.
  • Heat the oil in a frying pan and saute/fry the onion gently till translucent/soft.
  • Add in the wine and boil for 34 min.
  • Add in the tomatoes oregano and seasoning.
  • Stir to mix everything and cook gently for 15-20 min stirring occasionally till the sauce looks quite thick.
  • Fold in the prawns and parsley empty the contents of the pan into an ovenproof dish and sprinkle the cheese cubes all over the top.
  • Bake for 20 min.
  • Serve warm.
