Ingredients

  • 23 cups Butter
  • 23 cups All-purpose Flour
  • 7 cups Milk
  • 4 whole Baked Potatoes, Baked, Cooled, Peeled, And Cubed
  • 4 whole Scallions, Thinly Sliced
  • 1- 1/4 cup Mild Cheddar Cheese, Shredded
  • 12 strips Bacon, Cooked, Drained, And Crumbled
  • 1 cup Sour Cream

Method

  • In a large Dutch oven or stockpot, melt the butter over low heat.
  • Stir in flour.
  • Continue to heat and stir until smooth.
  • Gradually add milk, stirring constantly, until sauce has thickened.
  • Add potatoes and scallions.
  • Bring to a boil, stirring constantly.
  • Reduce heat and simmer for 10 minutes.
  • Add cheese, bacon, and sour cream.
  • Stir until cheese is melted.
  • Season to taste with salt and pepper.
  • Serve immediately.
