Ingredients

  • 1/2 c. fine dry bread crumbs (I like to make my own)
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp. dry mustard
  • 1/2 tsp. paprika
  • 1/8 tsp. black pepper
  • 2 whole chicken breasts, split
  • 1/3 c. mayonnaise

Method

  • Place bread crumbs, cheese, mustard, paprika and pepper in a large plastic bags.
  • Shake to blend
  • well.
  • Brush chicken with mayonnaise on all sides.
  • Add one piece at a time to crumb mixture; shake to coat well.
  • Arrange on broiler rack so that pieces do not touch.
  • Bake in 425° oven for 30 to 35 minutes or until golden brown and chicken is done and tender.
