Ingredients

  • 2 Tbsp. margarine or butter
  • 1 small onion, sliced and separated into rings (about 1/4 c.)
  • 1 can (10 3/4 oz.) Campbell's condensed broccoli cheese soup
  • 1/3 c. milk
  • 1/8 tsp. pepper
  • 4 medium potatoes (about 1 1/4 lb.), cooked and sliced (about 3 1/2 c.)
  • 3 slices bacon, cooked and crumbled (optional)
  • snipped fresh parsley (optional)
  • fresh parsley sprig for garnish

Method

  • In
  • 10-inch skillet over medium heat, in hot margarine, cook onion
  • until tender, stirring often.
  • Stir in soup, milk and pepper.
  • Add
  • potatoes;
  • stir
  • gently
  • to
  • coat.
  • Heat to boiling. Reduce
  • heat to low.
  • Cover; cook 5 minutes or until hot
  • and bubbling, stirring occasionally.
  • Sprinkle with bacon and snipped parsley.
  • Garnish with parsley sprig, if desired.
