Ingredients
- 4 c. cooked white rice
- 2 c. Ricotta cheese
- 1 Tbsp. curry powder
- 1/2 c. green onion, sliced thin
- 1/2 c. raisins
- 1/2 c. mango chutney
- 4 ripe papayas, cut 1/2 lengthwise
- 2 Tbsp. sugar
- 1/2 tsp. cinnamon
- 1/3 c. melted butter
Method
- Combine rice, cheese, curry powder, onions, raisins and chutney.
- Spoon 1/3 cup rice mixture into hollow of each papaya half.
- Combine sugar and cinnamon and drizzle with butter.
- Place on baking sheet.
- Bake in 450° oven for 15 minutes.
