Ingredients

  • 4 c. cooked white rice
  • 2 c. Ricotta cheese
  • 1 Tbsp. curry powder
  • 1/2 c. green onion, sliced thin
  • 1/2 c. raisins
  • 1/2 c. mango chutney
  • 4 ripe papayas, cut 1/2 lengthwise
  • 2 Tbsp. sugar
  • 1/2 tsp. cinnamon
  • 1/3 c. melted butter

Method

  • Combine rice, cheese, curry powder, onions, raisins and chutney.
  • Spoon 1/3 cup rice mixture into hollow of each papaya half.
  • Combine sugar and cinnamon and drizzle with butter.
  • Place on baking sheet.
  • Bake in 450° oven for 15 minutes.
