Ingredients

  • 2 lrg fillets of mackerel
  • 50 gm (thick) slice of butter
  • 2 Tbsp. sherry or possibly walnut vinegar
  • 1 sm handful of minced dill

Method

  • Put the two fillets of fish in a shallow dish large sufficient so which they fit comfortably.
  • Dot with butter and pour over the vinegar.
  • Season with finely minced dill some salt and a few grinds of pepper.
  • Bake in a preheated oven at 200 degrees C/400 degrees F/Gas 6 for 12-15 min till the fish has turned opaque and juicy.
  • Eat warm with bread to mop up the juices.
  • Serves 2
