Ingredients

  • 1 1/2 c. elbow macaroni
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1/4 c. milk
  • 1 c. light cream
  • 1/4 tsp. paprika
  • 1/2 tsp. white pepper
  • 2 1/2 c. grated sharp cheese
  • salt

Method

  • Preheat oven to 350°.
  • Boil macaroni according to package directions; drain and set aside.
  • Meanwhile, melt butter in a medium saucepan over low heat.
  • Blend in flour, stirring constantly.
  • Gradually stir in milk and cream.
  • Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes.
  • Remove from heat and add paprika, pepper and 2 cups of the cheese; stir until cheese is melted.
  • Gently stir in macaroni and salt to taste.
  • Place in a buttered 1-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter.
  • Bake 25 to 30 minutes.
