Ingredients

  • 6 slc white bread
  • 1 Tbsp. butter softened
  • 2 Tbsp. grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 6 x Large eggs
  • 6 x strips bacon

Method

  • Preheat oven to 350 degrees.
  • Remove the crusts from white bread and spread softened butter over one side.
  • Cut a 2 1/2-inch circle from the center of each bread slice, then cut the remaining bread slice into triangles.
  • Place each buttered bread circle, buttered-side up, in custard c.. Place the triangles around the edges with the points facing up.
  • Bake for 7 min, till crisp and golden brown.
  • Meanwhile, combine Parmesan, salt and pepper in a small bowl and mix well; set aside.
  • Gently break Large eggs, placing one in each baked c.; sprinkle with cheese mix.
  • Bake for 12 to 15 min.
  • Meanwhile, cook strips of bacon till crisp.
  • Crumble proportionately over baked Large eggs.
  • This recipe yields 6 servings.
