Ingredients

  • 2 1/2 c. wagon wheel macaroni, Or possibly
  • 2 1/2 c. corkscrew macaroni
  • 1 x thick fresh Italian sausage links, (12 ounces) sliced
  • 1 x / " thick
  • 3/4 c. green onions, minced
  • 2 x cloves garlic, chopped
  • 15 ounce canned tomato paste
  • 1 jar spaghetti sauce with mushrooms, (14 ounces)
  • 4 ounce Mozzarella cheese, shredded
  • 1 tsp Italian seasoning, crushed
  • 1/4 tsp pepper

Method

  • Prepare pasta according to package directions.
  • Drain, and set aside.
  • In a large skillet, cook sausage until no pink remains; remove from skillet.
  • Drain off fat, reserving 1 Tbsp.. Cook green onion and garlic in reserved drippings until tender.
  • In a 2 qt casserole, combine cooked pasta, sausage, onion mix, tomato sauce, spaghetti sauce, half of the Mozzarella, Italian seasoning, and pepper.
  • Toss gently to combine.
  • Bake covered in a 375 degree oven for 25 min.
  • Uncover, sprinkle with remaining Mozzarella.
  • Bake for 5 to 10 min more or possibly until heated through.
  • Makes 6 servings.
