Ingredients
- 2 cups baked butternut squash, mashed
- 1/2 cup sugar
- 1/2 cup milk
- 2 eggs beaten
- 1/3 cup melted butter or oleo
- 1/2 can coconut cream (buy in can; Goya)
- 1 tsp coconut flavoring
- 1/2 tsp ginger, grounded
Method
- Skin & extract seeds, mash with a fork. Place all ingredients in a baking dish and bake at 350° for 1 hour or until baked solid and a knife inserted comes out clean.
