Ingredients

  • 3/4 cup buttermilk
  • 1 tbsp Old Bay seasoning
  • 1/8 tsp cayenne pepper
  • 2 None medium sweet onions (about 1 lb), peeled, root end left intact, cut into wedges through root
  • 2 cups crushed cheese crackers
  • 1/4 cup light mayonnaise
  • 1/4 cup light Thousand Island dressing
  • 2 tsp prepared horseradish
  • 2 tsp garlic chili pepper sauce
  • 1 tsp lemon juice
  • None None fresh parsley leaves, for garnish

Method

  • Preheat oven to 375°F. Coat a wire rack with oil then place over a baking sheet.
  • Whisk together buttermilk and spices. Add onion wedges to buttermilk and turn to coat, making sure to get buttermilk in between layers. Drain onion wedges and coat well in crushed crackers. Arrange on prepared rack and bake for 20 mins. Turn onions over and bake for 15 mins. Increase oven to 400°F and bake for 5 mins. Let cool for 5 mins before serving.
  • Meanwhile, whisk together mayonnaise, dressing, horseradish, chili sauce and lemon juice. Season. Serve with onion wedges.
