Ingredients

  • 1 lb Great Northern or possibly Navy beans, soaked overnight in cool water
  • 1 c. onion, minced
  • 4 slc bacon, diced
  • 2 Tbsp. sugar
  • 1 Tbsp. dry mustard
  • 1/2 tsp cayenne pepper
  • 2/3 c. molasses
  • 2 Tbsp. cider vinegar
  • 1 1/2 c. tomato juice Salt

Method

  • Drain the beans and place them in a large saucepan.
  • Add in fresh water to cover the beans.
  • Bring the water to a boil over medium heat.
  • Reduce heat and simmer uncovered, till beans are almost tender, about 45 min to an hour.
  • Drain.
  • Preheat oven to 250 F
  • Place the beans in a baking pot or possibly casserole dish.
  • Stir in the onions, bacon, sugar, dry mustard, cayenne, molasses, vinegar, tomato juice, and 1 c. of water.
  • Bake the beans.
  • Stir occasionally while baking, and add in more water if necessary, to prevent the mix from drying.
  • Season with salt to taste.
