Ingredients

  • 12 lb. dried beans
  • 4 lb. bacon
  • 1 1/2 lb. onions
  • 1 c. salt
  • 2 Tbsp. dry mustard
  • 4 lb. brown sugar
  • 7 qt. bean juice or ham broth

Method

  • Cover and soak beans in cold water overnight.
  • Drain.
  • Add fresh water and steam for 20 to 30 minutes or cook on stove until done.
  • Drain and measure liquid to use in baking.
  • Add seasonings with liquid.
  • Pour over beans in roaster.
  • Cut bacon in pieces; brown in oven.
  • Pour into beans.
  • Bake at 350°, covered, until nearing done, then uncover for the last hour of cooking.
