Ingredients
- 12 lb. dried beans
- 4 lb. bacon
- 1 1/2 lb. onions
- 1 c. salt
- 2 Tbsp. dry mustard
- 4 lb. brown sugar
- 7 qt. bean juice or ham broth
Method
- Cover and soak beans in cold water overnight.
- Drain.
- Add fresh water and steam for 20 to 30 minutes or cook on stove until done.
- Drain and measure liquid to use in baking.
- Add seasonings with liquid.
- Pour over beans in roaster.
- Cut bacon in pieces; brown in oven.
- Pour into beans.
- Bake at 350°, covered, until nearing done, then uncover for the last hour of cooking.
