Ingredients

  • 1/4 c. Port wine
  • 1/4 c. frozen apple juice
  • 1/4 c. raisins
  • 1/4 tsp. ground cumin
  • 4 apples (Red Rome best)

Method

  • Heat wine and juice until starts to boil.
  • Turn heat off.
  • Add raisins and cumin.
  • Stir and let stand 15 minutes.
  • Core apples. Score to within 1/2-inch of bottom.
  • Place apples in baking dish, not touching.
  • Stuff with juice soaked raisins.
  • Spoon remaining juice over apples.
  • Put water in dish 1/3-inch deep.
  • Cover with foil.
  • Bake 20 minutes.
  • Uncover and bake 20 minutes more.
  • Serve warm.
