Ingredients
- 1/4 c. Port wine
- 1/4 c. frozen apple juice
- 1/4 c. raisins
- 1/4 tsp. ground cumin
- 4 apples (Red Rome best)
Method
- Heat wine and juice until starts to boil.
- Turn heat off.
- Add raisins and cumin.
- Stir and let stand 15 minutes.
- Core apples. Score to within 1/2-inch of bottom.
- Place apples in baking dish, not touching.
- Stuff with juice soaked raisins.
- Spoon remaining juice over apples.
- Put water in dish 1/3-inch deep.
- Cover with foil.
- Bake 20 minutes.
- Uncover and bake 20 minutes more.
- Serve warm.
