Ingredients

  • 6 med Cooking apples
  • 1/4 c. Unsweetened apple juice
  • 1/4 c. ,water
  • 1 Tbsp. Lemon juice
  • 2 whl cloves
  • 1 x (4-inch) stick cinnamon, broken in half
  • 1/3 c. Reduced-calorie orange marmalade
  • 6 sm Gingersnap cookies, crushed

Method

  • Core apples to within 1/2 inch from bottom; peel top third of each apple.
  • Place apples in a 12" x 8" x 2" baking dish; add in apple juiceand next 4 ingredients.
  • Bake, uncovered, at 350F for 30 min, basting often with cooking liquid.
  • Remove apples from oven; spoon equal amounts of marmalade into center of each apple, and sprinkle with gingersnap crumbs.
  • Bake an additional 5 min or possibly till apples are done.
  • Yield: 6 servings.
