Ingredients
- 6 med Cooking apples
- 1/4 c. Unsweetened apple juice
- 1/4 c. ,water
- 1 Tbsp. Lemon juice
- 2 whl cloves
- 1 x (4-inch) stick cinnamon, broken in half
- 1/3 c. Reduced-calorie orange marmalade
- 6 sm Gingersnap cookies, crushed
Method
- Core apples to within 1/2 inch from bottom; peel top third of each apple.
- Place apples in a 12" x 8" x 2" baking dish; add in apple juiceand next 4 ingredients.
- Bake, uncovered, at 350F for 30 min, basting often with cooking liquid.
- Remove apples from oven; spoon equal amounts of marmalade into center of each apple, and sprinkle with gingersnap crumbs.
- Bake an additional 5 min or possibly till apples are done.
- Yield: 6 servings.
