Ingredients

  • 30 pitted dates
  • 30 slices prosciutto or 30 slices thin bacon
  • 1 (8 ounce) package feta cheese
  • 12 cup cream cheese
  • 2 teaspoons mixed herbs (oregano, basil, savory, etc.)
  • 1 cup balsamic vinegar
  • 12 cup brown sugar

Method

  • Preheat oven to 350 degrees F.
  • Crumble feta cheese into a bowl and add cream cheese and mixed herbs.
  • Spoon cheeses into dates with a small spoon.
  • Cut prosciutto or bacon to fit once around each date and secure with a toothpick.
  • Bake until outside is browned and crisped, around 10 minutes.

  • While waiting for dates to bake, mix vinegar and sugar into a sauce pan and boil on high for a minute, stirring constantly.
  • Take vinegar reduction off of heat and let set to thicken.
  • When dates are done, take out of oven and drizzle reduction over the dates.
