Ingredients

  • 3 pounds fresh jalapenos
  • 8 ounces cream cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 pound hickory smoked bacon
  • 1/2 cup finely chopped yellow onion
  • 2 tablespoons butter
  • 1/4 cup lime juice
  • 1/4 cup honey

Method

  • Preheat oven to 400 degrees
  • Cut jalapenos in half and remove seeds
  • Sautee chopped onion in pan with butter over low heat until translucent
  • In a separate bowl, mix cream cheese, cheddar, and parmesan
  • Mix in sauteed onions to cheese mixture
  • Spoon mixture into each jalapeno until mixture runs out
  • Wrap jalapeno with half a slice of bacon
  • Place on cookie sheet
  • Bake for 20 to 25 minutes or until bacon is golden brown
  • Mix lime juice and honey together
  • Brush lime and honey mixture over jalapenos before serving
