Ingredients
- 1 1/2 lb. bacon
- 1/2 c. mayonnaise
- 1/2 c. chopped green onion
- 24 cherry tomatoes
Method
- Dice bacon.
- Fry until crisp.
- Drain and cool on paper towels. Mix bacon, green onions and mayonnaise.
- Cut thin slice off top of tomatoes.
- Scoop out pulp.
- Invert and drain on paper towels for 30 minutes.
- Fill with bacon mixture.
- Refrigerate overnight.
