Ingredients

  • 2 slice Bacon
  • 4 oz Boneless/Skinless Chicken Breast
  • 1/2 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1 2-inch Slice of Italian Bread
  • 1/2 tbsp Dijon Mustard
  • 1 tbsp Blue Cheese

Method

  • Preheat broiler to high.
  • Cut both bacon slices in half.
  • Add to medium skillet over medium-low heat and cook for 4-5 minutes on each side, or until cooked through.
  • Remove and place on paper towel to absorb excess fat.
  • Sprinkle both sides of chicken breast with salt and pepper and add to skillet with remaining bacon fat.
  • Increase heat to medium and cook for 6-7 minutes on each side, or until cooked through.
  • Meanwhile, slice Italian bread in half to create a top and bottom piece.
  • Lay on baking sheet cut side up and place under broiler for 3 minutes or until lightly toasted.
  • On bottom half of toasted bread, smear Dijon mustard and add blue cheese.
  • Place cooked chicken on top, followed by cooked bacon.
  • Top with top piece of bread and serve.
