Ingredients
- 2 slice Bacon
- 4 oz Boneless/Skinless Chicken Breast
- 1/2 tsp Salt
- 1/4 tsp Ground Black Pepper
- 1 2-inch Slice of Italian Bread
- 1/2 tbsp Dijon Mustard
- 1 tbsp Blue Cheese
Method
- Preheat broiler to high.
- Cut both bacon slices in half.
- Add to medium skillet over medium-low heat and cook for 4-5 minutes on each side, or until cooked through.
- Remove and place on paper towel to absorb excess fat.
- Sprinkle both sides of chicken breast with salt and pepper and add to skillet with remaining bacon fat.
- Increase heat to medium and cook for 6-7 minutes on each side, or until cooked through.
- Meanwhile, slice Italian bread in half to create a top and bottom piece.
- Lay on baking sheet cut side up and place under broiler for 3 minutes or until lightly toasted.
- On bottom half of toasted bread, smear Dijon mustard and add blue cheese.
- Place cooked chicken on top, followed by cooked bacon.
- Top with top piece of bread and serve.
