Ingredients

  • 1/2 kg bread cubes
  • 1 kg frozen leaf spinach (defrosted)
  • 1 chopped onion
  • 2 garlic cloves
  • 1 rapeseed oil
  • 50 grams parmesan cheese
  • 1 salt
  • 1 pepper
  • 3 eggs
  • 300 ml milk
  • 1 butter

Method

  • Put the bread cubes in a large pot.
  • Grate the cheese and mix it with the cubes.
  • Heat the oil in a pan.
  • Add the chopped onions and the garlic.
  • Chop the spinach an also put it in the pan.
  • Season with salt and pepper.
  • Mix the warm spinach with the cubes and wait 10 minutes.
  • Now whisk the eggs with the milk and mix it with the spinach-cubes.
  • Let it rest for about 1 hour.
  • Preheat the oven to 200C.
  • Form dumplings and place them on a griddle.
  • Before baking put some melted butter on them.
  • Bake the dumplings for 20 minutes till they are golden brown.
  • Enjoy them hot with melted butter and grated parmesan.
