Ingredients
- 1/2 kg bread cubes
- 1 kg frozen leaf spinach (defrosted)
- 1 chopped onion
- 2 garlic cloves
- 1 rapeseed oil
- 50 grams parmesan cheese
- 1 salt
- 1 pepper
- 3 eggs
- 300 ml milk
- 1 butter
Method
- Put the bread cubes in a large pot.
- Grate the cheese and mix it with the cubes.
- Heat the oil in a pan.
- Add the chopped onions and the garlic.
- Chop the spinach an also put it in the pan.
- Season with salt and pepper.
- Mix the warm spinach with the cubes and wait 10 minutes.
- Now whisk the eggs with the milk and mix it with the spinach-cubes.
- Let it rest for about 1 hour.
- Preheat the oven to 200C.
- Form dumplings and place them on a griddle.
- Before baking put some melted butter on them.
- Bake the dumplings for 20 minutes till they are golden brown.
- Enjoy them hot with melted butter and grated parmesan.
