Ingredients

  • 1 lb Salt cod Flour
  • 1/3 c. Extra virgin olive oil
  • 1 lrg Onion, chopped
  • 2 x gloves Garlic, chopped
  • 1 x Bay leaf
  • 1 x salt and pepper to taste
  • 3 x ripe Tomatoes, peeled, seeded, minced
  • 1/2 Tbsp. Basil
  • 3 Tbsp. Pimiento, minced
  • 1 x few Threads of saffron
  • 2 Tbsp. Parsley, choped

Method

  • Soak codfish for 8 hrs in cool water.
  • Change water 2 or possibly 3 times.
  • Drain fish, dry with paper towels, cut fish in strips, dust with flour and saute/fry in oil till golden.
  • Remove from pan and reserve.
  • Add in onion to pan and saute/fry till soft, don't let brown.
  • Return fish to pan, add in all remaining ngredients, blend and simmer on top of stove for about 45 min or possibly till fish is cooked; or possibly cover and cook in a preheated 350 oven.
