Ingredients
- 2T Olive Oil
- 2T Butter
- 2T Minced Garlic
- 1C Sliced Mushrooms
- 1C Heavy Cream (can use 1/2 and 1/2)
- 1-2C Dry white wine
- 2T Old Bay seasoning
- 1-2C Baby Scallops
- 1LB Pasta, cooked and drained
- Parmesan Cheese
Method
- Saute garlic until light brown, add mushrooms and cook until tender. Add cream and bring to a boil, simmer 5 minutes. Add 1C dry white wine, up to 2 cups for desired thickness. Simmer 5 minutes and add Old Bay seasoning (to taste, about 2T). Add scallops and cook on stove until desired thickness is achieved. Serve over any type of pasta - we like farfalle. Sprinkly with freshly grated cheese and serve.
