Ingredients

  • 7 x Large eggs
  • 2 Tbsp. Skim lowfat milk
  • 1 Tbsp. Chicken stock
  • 1 c. Corn
  • 1/4 tsp Chili pwdr
  • 4 x Corn tortillas
  • 1 x Sweet red pepper rings
  • 1 x Parsley sprigs

Method

  • Beat the Large eggs, whisk in lowfat milk.
  • Heat stock in large skillet and add in the corn.
  • Cook 2 to 3 min.
  • Stir in the Large eggs and sprinkle with chili pwdr.
  • Cook over low-medium heat, stirring occasionally, till the Large eggs are set.
  • Place one-fourth of mix on each tortilla.
  • Serve garnished with pepper rings and parsley sprigs, if you like.
