Ingredients
- 1 lb. shrimp, peeled, deveined and cooked
- juice of 1 lemon
- 2 hard-cooked eggs, chopped
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 tsp. horseradish
- 1 tsp. Dijon mustard
- 1 tsp. pepper
- 1/2 c. mayo
- 2 ripe avocados, peeled and halved
Method
- Chop shrimp; place in large bowl and sprinkle with fresh lemon juice.
- Add next 7 ingredients, mixing well. Chill.
- Fill avocado halves with shrimp mixture.
