- 2 Tbsp. butter
- 1 small onion, diced
- 2 Tbsp. flour
- 3 c. fresh chicken stock
- 1 Tbsp. fresh lemon juice
- 1/2 c. sherry
- 2 garlic cloves, pressed
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 ripe avocados, diced
- 2 c. half and half
- parsley, chopped
- fresh tomatoes, chopped
Method
- Melt butter in a large saucepan.
- Saute onion until soft. Stir in flour.
- Add chicken stock and cook until thick.
- Stir in lemon juice, sherry, garlic, salt and pepper and simmer for 15 minutes.
- Blend diced avocados with half and half until smooth. Add to saucepan and simmer for 10 minutes.
- Chill and serve garnished with chopped parsley.
- Or serve hot.
