Ingredients

  • 2 Tbsp. butter
  • 1 small onion, diced
  • 2 Tbsp. flour
  • 3 c. fresh chicken stock
  • 1 Tbsp. fresh lemon juice
  • 1/2 c. sherry
  • 2 garlic cloves, pressed
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 ripe avocados, diced
  • 2 c. half and half
  • parsley, chopped
  • fresh tomatoes, chopped

Method

  • Melt butter in a large saucepan.
  • Saute onion until soft. Stir in flour.
  • Add chicken stock and cook until thick.
  • Stir in lemon juice, sherry, garlic, salt and pepper and simmer for 15 minutes.
  • Blend diced avocados with half and half until smooth. Add to saucepan and simmer for 10 minutes.
  • Chill and serve garnished with chopped parsley.
  • Or serve hot.
