Ingredients
- 1 sheet frozen puff pastry, thawed
- 1 None avocado, pitted, peeled and chopped
- 3 oz goat cheese, crumbled
- 12 None cherry tomatoes, quartered
- 4 slices prosciutto, torn
Method
- Preheat the oven to 425°F. Line a baking pan with parchment paper.
- Cut pastry into six 5 x 3-inch strips. Score a 1/4-inch border around the edge of each piece with a small knife. Prick the center with a fork. Place on the prepared pan.
- Bake 6-8 mins, until puffed and golden. Top each evenly with avocado, cheese, tomato and prosciutto. Season to taste and serve.
