Ingredients

  • 1 teaspoon oil
  • 1 cup onion, chopped
  • 1 teaspoon ground cumin
  • 1 lb yam, peeled and cut into chunks
  • 1 large green apple, peeled and cut into chunks
  • 1 (14 1/2 ounce) can chicken broth
  • 1 (6 ounce) can apple juice
  • 18 teaspoon cinnamon
  • salt and pepper
  • 12 cup creamy peanut butter

Method

  • In large saucepan over medium heat, heat oil.
  • Add onions and cumin.
  • Cook until onion is translucent, stirring occasionally.
  • Add yams, apple, broth, apple juice, cinnamon, and salt and pepper to taste.
  • Cover and bring to a boil.
  • Reduce heat and simmer for 20 minutes, or until apples are tender.
  • Add peanut butter.
  • Stir until melted.
  • Ladle into blender in batches if nessesary and blender until smooth.
  • Return to pan.
  • Heat through.
  • To serve, ladle into bowls.
  • Garnish with sour cream, chopped peanuts, and apple slices, if desired.
