Ingredients

  • 2 cups all-purpose flour
  • 13 cup sugar
  • 23 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 14 ginger
  • 14 teaspoon baking soda
  • 12 cup canned pumpkin
  • 12 cup melted butter
  • 13 cup buttermilk
  • 2 eggs, lightly beaten

Method

  • Heat the oven to 400F.
  • Grease 12 muffin tins or lined cups.
  • In a large bowl: Combine all ingredients except for pumpkin, butter, buttermilk, and eggs.
  • In seperate bowl, combine the rest of ingredients.
  • Mix into the flour mxture until moistened.
  • Spoon the batter into the cups.
  • Bake about 20 minutes or until a toothpick comes out clean.
  • Let cool before removing from the tins.
