Ingredients

  • 1 c. walnuts, chopped (not fine)
  • 2/3 c. flour
  • 3 tsp. baking powder
  • 1 1/2 tsp. salt
  • 2 large eggs
  • 1 1/2 c. sugar
  • 3 tsp. vanilla
  • 2 c. apples, peeled, cored and diced (use 2 kinds of cooking apples to enhance differences in taste)

Method

  • Beat eggs until thick.
  • Add sugar to eggs slowly, 1/2 cup at a time.
  • Stir in vanilla.
  • Sift flour, baking powder and salt together.
  • Stir in flour mixture 1/2 at a time.
  • Fold in apples. Stir in walnuts.
  • Pour into greased 9 x 13-inch pan.
  • Bake at 350° for 35 minutes.
