Ingredients
- bread crumbs
- 6 large chicken breasts, skinned and boned
- 1 (8 oz.) jar Catalina French dressing
- 1 small jar apricot or peach preserves
- 1 pkg. Lipton onion soup mix
- 1 (16 oz.) can pineapple chunks (reserve juice)
- 1 c. water
Method
- Slice each breast in 2 thin layers.
- Wet, then dip each piece in bread crumbs and fry in butter or oil just until crisp on each side.
- Lay chicken in a 13 x 9-inch pan.
- Mix all ingredients that are left and pour over the chicken.
- Cover and bake until sauce thickens, about 40 minutes in a 350° oven.
