Ingredients

  • bread crumbs
  • 6 large chicken breasts, skinned and boned
  • 1 (8 oz.) jar Catalina French dressing
  • 1 small jar apricot or peach preserves
  • 1 pkg. Lipton onion soup mix
  • 1 (16 oz.) can pineapple chunks (reserve juice)
  • 1 c. water

Method

  • Slice each breast in 2 thin layers.
  • Wet, then dip each piece in bread crumbs and fry in butter or oil just until crisp on each side.
  • Lay chicken in a 13 x 9-inch pan.
  • Mix all ingredients that are left and pour over the chicken.
  • Cover and bake until sauce thickens, about 40 minutes in a 350° oven.
