Ingredients
- 1 can artichokes, chopped
- 2 pkg. frozen spinach, cooked
- 1 1/2 sticks butter or margarine
- 1 (3 oz.) pkg. cream cheese
- 1/2 c. grated Parmesan cheese
- 2 egg whites, beaten until stiff
- 1/3 pkg. herbed stuffing mix
Method
- Combine 1/2 cup butter (softened), cream cheese and Parmesan cheese.
- Mix with artichokes and spinach.
- Fold in egg whites. Put in 2-quart casserole.
- Melt remaining 1/4 cup butter.
- Mix with herbed stuffing mix.
- Put on top of casserole.
- Bake 30 minutes at 325°.
