Ingredients

  • 1 can artichokes, chopped
  • 2 pkg. frozen spinach, cooked
  • 1 1/2 sticks butter or margarine
  • 1 (3 oz.) pkg. cream cheese
  • 1/2 c. grated Parmesan cheese
  • 2 egg whites, beaten until stiff
  • 1/3 pkg. herbed stuffing mix

Method

  • Combine 1/2 cup butter (softened), cream cheese and Parmesan cheese.
  • Mix with artichokes and spinach.
  • Fold in egg whites. Put in 2-quart casserole.
  • Melt remaining 1/4 cup butter.
  • Mix with herbed stuffing mix.
  • Put on top of casserole.
  • Bake 30 minutes at 325°.
