Ingredients

  • 3 jars (6 oz. each) marinated artichoke hearts
  • 1 medium onion, minced
  • 2 cloves garlic, minced
  • 6 large eggs
  • 1/4 tsp. salt
  • 1/4 tsp. oregano
  • 1/4 tsp. pepper
  • 1/4 tsp. Tabasco sauce
  • 3 c. (12 oz.) shredded sharp Cheddar cheese
  • 3 Tbsp. minced parsley

Method

  • Preheat oven to 325°.
  • Grease 9 x 11-inch pan.
  • Place 1 teaspoon of marinade from artichokes in a saute pan.
  • Add the minced onion and garlic.
  • Saute over medium heat until onion is limp.
  • Chop the artichoke hearts, set aside.
  • In a bowl mix all remaining ingredients.
  • Blend well.
  • Add the onion mixture and artichoke hearts; blend.
  • Pour into prepared pan.
  • Bake for 30 to 40 minutes.
  • Done when puffed and brown.
  • Serve warm or at room temperature.
