Ingredients

  • 1 c. uncooked rice
  • 3 Tbsp. vegetable oil
  • 1 3/4 to 2 c. water
  • 1 1/2 c. sliced, smoked sausage
  • 1/2 c. chopped onions
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/4 c. grated Parmesan cheese
  • Spicy Tomato Sauce

Method

  • In a heavy 2-quart saucepan, brown rice in oil until golden, stirring.
  • Add 1 3/4 cups of water, sausage, onions, tomato sauce, salt and chili powder.
  • Heat to boiling.
  • Stir.
  • Cover and simmer over low heat 25 to 30 minutes until rice is tender.
  • Stir with fork.
  • Add 1/4 cup of water if rice is too dry.
  • Fluff rice with fork and stir in cheese.
  • Serve with Spicy Tomato Sauce.
