Ingredients
- 1 c. uncooked rice
- 3 Tbsp. vegetable oil
- 1 3/4 to 2 c. water
- 1 1/2 c. sliced, smoked sausage
- 1/2 c. chopped onions
- 1 (8 oz.) can tomato sauce
- 1 tsp. salt
- 1 tsp. chili powder
- 1/4 c. grated Parmesan cheese
- Spicy Tomato Sauce
Method
- In a heavy 2-quart saucepan, brown rice in oil until golden, stirring.
- Add 1 3/4 cups of water, sausage, onions, tomato sauce, salt and chili powder.
- Heat to boiling.
- Stir.
- Cover and simmer over low heat 25 to 30 minutes until rice is tender.
- Stir with fork.
- Add 1/4 cup of water if rice is too dry.
- Fluff rice with fork and stir in cheese.
- Serve with Spicy Tomato Sauce.
