Ingredients

  • 1/2 of a white onion, diced
  • 2 cloves garlic minced
  • 2 Tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 Tbsp fresh lime juice
  • 1 tsp salt (only if using unsalted broth)
  • chopped fresh parsley for garnish if desired

Method

  • Heat the olive oil in a saucepan over medium high heat. Saute the onion and garlic until onion is translucent, about 3-4 minutes. Add the rice and saute another few minutes until the rice grains show spots of white. Add the broth and lime juice, and bring to a boil. Cover, lower heat to low and cook 25-30 minutes, until liquid is fully absorbed and rice is cooked. Remove from heat, allow to sit for 5 minutes, then fluff with a fork and serve, garnishing wth parsley if using.
