Ingredients

  • 12 cup olive oil
  • 14 cup red wine vinegar
  • 12 cup finely chopped onion
  • 1 teaspoon finely chopped garlic
  • 14 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 14 teaspoon cayenne pepper
  • 1 12 teaspoons salt
  • 1 teaspoon fresh ground black pepper

Method

  • In a bowl, combine the oil and vinegar, and beat them together with a whisk.
  • Stir in the onions, garlic, parsley, oregano, cayenne, salt and black pepper, and taste for seasoning.
  • To develop its flavor, let the sauce stand at room temperature for 2 or 3 hours before serving.
  • "Chimichurri" is a traditional sauce for grilled and roasted meats.
