Ingredients

  • 1 large apricot gelatin mix
  • 2/3 c. granulated sugar
  • 2/3 c. water
  • 2 - 4 oz. small baby food apricot, strained
  • 1- 20 oz. can crushed pineapple with juice
  • 1- 8 oz. pkg. cream cheese, softened
  • 1/3 c. pecans, chopped
  • 1- 8 oz. Cool Whip

Method

  • In small sauce pan, combine jello, sugar, and water.
  • Bring to a boil.
  • Stir and dissolve well.
  • Remove from heat.
  • Add baby food and pineapple with juice.
  • Stir and set aside for 10 minutes. In a small bowl, mix cream cheese and Cool Whip until smooth. Pour into fruit mixture and mix together.
  • Stir in pecans and refrigerate until firm.
