Ingredients
- 4 pork chops
- 2 teaspoons olive oil
- 1 small onion, cut in thin wedges
- 12 cup apricot preserves
- 14 cup water
- 1 tablespoon honey mustard
- 1 teaspoon paprika
- 12 teaspoon ground nutmeg
Method
- Season pork with salt and pepper.
- In skillet, heat olive oil over medium-high heat; add chops and onion.
- Cook 3-6 minutes; turn and cook an additional 3-6 minutes.
- Meanwhile, in a small microwave-safe bowl combine preserves, mustard, 1/4 cup water, paprika, and nutmeg.
- Heat in microwave for 1 minute or until melted.
- Pour over pork in skillet.
- Reduce heat to medium.
- Cook, covered, 10 minutes or until pork is cooked through.
