Ingredients

  • 4 pork chops
  • 2 teaspoons olive oil
  • 1 small onion, cut in thin wedges
  • 12 cup apricot preserves
  • 14 cup water
  • 1 tablespoon honey mustard
  • 1 teaspoon paprika
  • 12 teaspoon ground nutmeg

Method

  • Season pork with salt and pepper.
  • In skillet, heat olive oil over medium-high heat; add chops and onion.
  • Cook 3-6 minutes; turn and cook an additional 3-6 minutes.
  • Meanwhile, in a small microwave-safe bowl combine preserves, mustard, 1/4 cup water, paprika, and nutmeg.
  • Heat in microwave for 1 minute or until melted.
  • Pour over pork in skillet.
  • Reduce heat to medium.
  • Cook, covered, 10 minutes or until pork is cooked through.
