Ingredients
- 1 c. dried apricots
- 1 c. boiling water
- 1 c. sugar
- 1/2 c. butter or margarine softened
- 1 c. sour cream
- 2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. grated orange peel (optional)
- 1/2 c. nuts
Method
- Soak apricots in water for 5 minutes.
- Cream butter and sugar until fluffy.
- Add sour cream and mix well.
- Combine dry ingredients just till moist, add drained apricots.
- Fold in orange peel and nuts.
- Bake at 400° for 20 minutes.
- Cool 10 minutes before removing from pan.
- Makes 16 muffins.
