Ingredients

  • 1 c. dried apricots
  • 1 c. boiling water
  • 1 c. sugar
  • 1/2 c. butter or margarine softened
  • 1 c. sour cream
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 Tbsp. grated orange peel (optional)
  • 1/2 c. nuts

Method

  • Soak apricots in water for 5 minutes.
  • Cream butter and sugar until fluffy.
  • Add sour cream and mix well.
  • Combine dry ingredients just till moist, add drained apricots.
  • Fold in orange peel and nuts.
  • Bake at 400° for 20 minutes.
  • Cool 10 minutes before removing from pan.
  • Makes 16 muffins.
