Ingredients
- 2 c. flour
- 1/4 c. wheat germ
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt (optional)
- 1/4 tsp. nutmeg
- 1 c. cut up dried apricots
- 1/2 c. nuts (optional)
- 1/4 c. corn oil
- 2 egg whites
- 1 c. orange juice
Method
- Mix all ingredients.
- Bake at 425° for 20 to 25 minutes. Makes 9 to 12 muffins.
- Low-fat and cholesterol.
