Ingredients

  • 1 cup couscous
  • 1 tablespoon packed brown sugar
  • 1 cinnamon stick
  • 1 12 cups apple cider
  • 12 cup dried apricot

Method

  • Put couscous brown sugar, cinnamon stick and apple cider in a medium pot over high heat.
  • Chop 1/2 cup dried apricots.
  • Add the apricots to the pot.
  • When the cider comes to a boil, cover the pot and turn off the heat.
  • Let the couscous steep for about 5 minutes.
  • Fish out the cinnamon stick.
  • Fluff the couscous with a fork, taste and adjust the seasoning.
  • Can use 1/4 teaspoon ground cinnamon instead of the cinnamon stick.
