Ingredients
- 200 g dried apricots, chopped
- 12 cup orange juice
- 14 teaspoon citric acid
- 12 cup icing sugar
- 1 cup coconut
- 1 cup fine plain sweet biscuit crumbs
- 12 cup melted chocolate
Method
- Put apricots, orange juice and citric acid into a saucepan.
- Cover and bring to the boil.
- Reduce heat and simmer for 10 minutes.
- Leave to cool.
- Puree apricot mixture in a food processor or blender.
- Transfer to a bowl.
- Add icing sugar, coconut and biscuit crumbs.
- Mix well.
- Measure tablespoons of mixture and roll into balls.
- Dip in melted chocolate.
- Chill until set.
