Ingredients

  • 200 g dried apricots, chopped
  • 12 cup orange juice
  • 14 teaspoon citric acid
  • 12 cup icing sugar
  • 1 cup coconut
  • 1 cup fine plain sweet biscuit crumbs
  • 12 cup melted chocolate

Method

  • Put apricots, orange juice and citric acid into a saucepan.
  • Cover and bring to the boil.
  • Reduce heat and simmer for 10 minutes.
  • Leave to cool.
  • Puree apricot mixture in a food processor or blender.
  • Transfer to a bowl.
  • Add icing sugar, coconut and biscuit crumbs.
  • Mix well.
  • Measure tablespoons of mixture and roll into balls.
  • Dip in melted chocolate.
  • Chill until set.
