Ingredients
- 2 c. all-purpose flour
- 3 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 c. brown sugar, packed
- 2 eggs, beaten
- 1/2 c. milk
- 1/4 c. milk
- 1/4 c. margarine, melted
- 3/4 c. applesauce
- 1/2 c. chopped pecans or walnuts
Method
- Grease 12 (2 1/2-inch) muffin cups.
- In a mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, salt and brown sugar. Stir until well blended.
- In a separate bowl, mix the eggs, milk, margarine and applesauce.
- Make a well in the dry ingredients and stir in the applesauce mixture with quick strokes just until well moistened.
- Fold in the nuts.
- Spoon the batter into the muffin cups filling them 3/4 full.
- Bake at 400° for 20 to 25 minutes.
