Ingredients

  • 2 c. all-purpose flour
  • 3 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 c. brown sugar, packed
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1/4 c. milk
  • 1/4 c. margarine, melted
  • 3/4 c. applesauce
  • 1/2 c. chopped pecans or walnuts

Method

  • Grease 12 (2 1/2-inch) muffin cups.
  • In a mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, salt and brown sugar. Stir until well blended.
  • In a separate bowl, mix the eggs, milk, margarine and applesauce.
  • Make a well in the dry ingredients and stir in the applesauce mixture with quick strokes just until well moistened.
  • Fold in the nuts.
  • Spoon the batter into the muffin cups filling them 3/4 full.
  • Bake at 400° for 20 to 25 minutes.
