- 1/2 c. unsalted butter
- 1 c. sugar
- 2 x Large eggs
- 1 1/2 tsp vanilla
- 1 3/4 c. flour
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1/2 c. grnd walnuts
- 1/2 c. lowfat milk
- 3 Tbsp. butter plus 1 tsp.
- 8 x apples (small) in 8 ths.
- 1/2 c. light brown sugar
Method
- 1.
- For the topping, heat 1 tsp.
- butter in heavy skillet.
- Add in apples and saute/fry till caramelized.
- About 3 min.
- 2.
- Combine remaining 3 Tbsp.
- of butter and brown sugar in a small saucepan and heat till blended.
- 3.
- Butter a 10 inch pan and spread brown sugar mix in bottom.
- Arrange apple splices in pan in concentric circles.
- Set aside.
- 4.
- For cake, preheat oven to 350.
- Cream butter and sugar till fluffy.
- Add in Large eggs and beat till light.
- Add in vanilla.
- 5.
- Add in dry ingredients alternately with lowfat milk, mixing to combine.
- Spread batter proportionately over apples.
- 6.
- Bake till cake springs back when touched.
- About 1 hour.
- 7.
- Let stand 10 min and invert onto cake plate.
- Let cold.
- Serve slightly hot.
