Ingredients

  • 2 c. sugar
  • 3 eggs
  • 1 1/4 c. oil
  • 1 tsp. vanilla
  • 1/4 c. orange juice
  • 2 c. flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 2 c. grated peeled apple
  • 1 c. chopped walnuts
  • 1 c. flaked coconut
  • Buttermilk Glaze

Method

  • Combine first 5 ingredients; mix well. Add flour, soda and cinnamon; mix well. Fold in apple, walnuts and coconut.
  • Spoon into greased and floured tube pan. Bake at 325° for 1 1/2 hours. Cool on rack 15 minutes. Turn into cake plate.
  • Drizzle Buttermilk Glaze over warm cake.
